How Best to Handle Sold out Variant?

Haven’t been able to find an answer for this specific issue. I have a product (my own, no other sellers) with 6 size variants (small through extra Large) under one parent listing. In the next few weeks I’m going to sell out of one size variant and don’t plan on ordering more (not enough profit/sales).

What is the best way to deal with the sold out variant without negatively affecting (or at least minimizing) the ranking, reviews, and account metrics of the other variants/parent listing. Do I just leave it as sold out? Close the variant listing? Delete the variant listing? It’s probably going to take me until the end of this year to sell out of the remaining variants.
